'Tis the season for…cupcakes!

'Tis the season for…cupcakes! That may not be the saying, but it sounds delicious. This is the second Christmas without my mom and the first that the shock isn’t front and center. I find that art projects make me focus on the present and allow me to escape from the endless thoughts. This is the perfect recipe if you are not much of a baker but love the idea of baking and/or enjoy decorating! King Arthur Baking Company has an entire line of gluten free items. My mom and I found out about their baked goods when she was gifted an assortment of them for her birthday; pancakes, cakes, donuts, waffles, cupcakes, cookies, flour, and single serve goodies. She had an entire basket and she was ready to share.

The holidays can at times be a challenge for people with food allergies (or just people in general). Many family gatherings do potluck style meals, which makes it difficult to be certain of ingredients in dishes. But remember that your people care about you, so just make sure to ask your follow up questions. For King Arthur Confetti Cake Mix, all you need is oil or butter, 3 large eggs, milk (my mom and I always used almond milk), and the mix. If you do not normally buy those products your initial price will be a bit higher, but once you have the butter/oil, eggs and milk, all you have to buy is the mix. Frosting and sprinkles are an additional charge if you’re feeling it.

This is the perfect time to dive into something creative and focus on the now. You can, of course, get as creative as you want. The 3 cupcakes in the photo are decorated with frosting, food coloring and sprinkles. Though I absolutely love King Arthur Baking Company , some may prefer a baked goodie from a local bakery. Petunia’s Pies & Pastries and New Cascadia Traditional are two dedicated gluten free bakeries in Portland, Oregon that have baked goods for the holidays! Just get your orders in quick because they go fast!
